Green Chile Pork Posole

Ingredients:

  • 2 pounds pork shoulder, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup roasted Hatch green chiles, chopped
  • 4 cups chicken broth
  • 2 cups hominy, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges (for serving)
  • Optional toppings: shredded cabbage, sliced radishes, diced avocado, chopped green onions

Instructions:

  1. Prepare the Pork: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the pork shoulder cubes and cook until browned on all sides, about 5-7 minutes.
  2. Cook the Aromatics: Add the chopped onion and minced garlic to the pot. Cook, stirring occasionally, until the onion is translucent and fragrant, about 5 minutes.
  3. Add the Green Chiles and Spices: Stir in the chopped Hatch green chiles, dried oregano, ground cumin, salt, and black pepper. Cook for another 2 minutes to let the flavors meld.
  4. Simmer the Posole: Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 1 hour, or until the pork is tender and cooked through.
  5. Add the Hominy: Stir in the drained hominy and continue to simmer for an additional 15-20 minutes, until the hominy is heated through and the flavors are well combined.
  6. Serve: Ladle the posole into bowls and garnish with fresh cilantro. Serve with lime wedges and optional toppings such as shredded cabbage, sliced radishes, diced avocado, and chopped green onions.
